Unlocking the iPhone (or any phone for that matter) will allow you to be able to use any GSM (if on a GSM network or CDMA if on that network) network rather than just one.
In the case of the iPhone, they come locked to AT&T. If you are on T-Mobile for example & want an iPhone but don’t want to switch to AT&T, either buying an unlocked iPhone or unlocking one yourself will allow you to use an iPhone on T-Mobile.
Also if you are going away & don’t want to pay roaming charges you could with an unlocked iPhone just use a pay as you go/pre-paid SIM from a local carrier instead & save money.
Locked phones don’t give you that flexibility

It allows you to use it with another network. It’s especially useful if you’re traveling to another country and want to use a prepaid sim. The problem is that it’s very difficult to keep an iPhone unlocked. You cannot upgrade your firmware through iTunes.
It’s not illegal. It simply voids your warranty.
